Soft and Chewy Chocolate Chip Cookies

Aside from pizza, there’s also been a serious cookie problem going on around here lately. The problem: I keep baking cookies, and they keep disappearing. Now how does that happen? I blame Martha Stewart. And not just for giving me an unhealthy obsession with attempting to fold fitted sheets into perfect squares. No, I also blame her for making such delicious cookie recipes. Which I then have to bake. And eat. Repeatedly.

These are good. Really good. Really, really good. I don’t think there’s much I love more than a perfect chocolate chip cookie. It doesn’t get much better or more simplistic than that.

Soft and Chewy Chocolate Chip Cookies

Makes 3 dozen cookies.

2 1/4 cups flour
1/2 teaspoon baking soda
1 cup unsalted butter, room temperature
1/2 cup sugar
1 cup light brown sugar
1 teaspoon salt
2 teaspoons vanilla extract
2 eggs
2 cups semisweet chocolate chips

Preheat oven to 350. Whisk flour and baking soda in bowl. Beat butter and sugars in mixing bowl with paddle attachment. Mix on medium until pale and fluffy, 2 minutes> Reduce speed to low. Add salt, vanilla, and eggs; mix until well blended, 1 minute. Mix in flour mixture. Stir in chocolate chips.

Drop heaping tablespoons of dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake cookies 10 to 12 minutes. Cool on wire racks.
