Broccoli Cheddar Soup

Have I mentioned lately that I love my Vitamix? ‘Cause I kinda do. A lot. Besides making my daily green breakfast smoothies, Vita also makes deeeelicious soup! And it’s super-duper easy (both to cook and clean…double points). The first soup we tried out was broccoli cheddar. It’s so tasty and really there’s nothing bad in here except cheese…and cheese is always good good good. I basically took the recipe that came with the Vitamix and tweaked it until we were happy with it.

And don’t think you need a lovely Vita to make this; it’s easily done with a regular blender or over the stove using an immersion blender. But the Vitamix is definitely going to be quick and dirty.

Broccoli Cheddar Soup

2 cloves minced garlic
1/2 onion, diced
2 cups chopped fresh or frozen broccoli, steamed
3 cups vegetable or chicken broth
1 cup milk
1 teaspoon cornstarch
2/3 cup shredded cheddar cheese
1 teaspoon salt

Heat oil over large stock pot on medium-high. Add garlic and onion and saute until golden brown.

Add broccoli and cook for approximately 5 minutes, stirring occasionally.

Add broth and milk; bring to simmer. Stir in cornstarch.

Add cheese and stir. Season with salt and simmer covered for 10 minutes.
Transfer soup to blender or use immersion blender directly in pot. Puree until thick (leave some chunks if you like). If you’ve used a blender, pour soup back into pot and heat through.
