Swiss Chard Quiche

We were trying to decide what to do with a recent bunch of chard and J mentioned making a quiche. I couldn’t find a good recipe I really liked, so this one is a bit of a hodge-podge of a few things I came across. I think chard could sub for spinach in just about any quiche recipe though. But this one was delicious! And really easy for a weeknight dinner.

Swiss Chard Quiche

Makes 6 servings.

2 tablespoons olive oil
1/2 chopped onion
2/3 bunch Swiss chard, roughly chopped (including stems)
1/2 cup grated Parmesan cheese
1 cup shredded Monterey Jack-Colby cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
4 eggs
1 cup milk
1 pie shell

Preheat oven to 375.

Heat skillet over medium-high heat. When heated, add oil. Once oil is warm, saute onion and chard, about 4 minutes. Season with salt and pepper to taste.

In bowl, whisk eggs and add milk and cheese. Fold in onion/chard. Season with salt and pepper.

Pour mixture into prepared pie dish. Bake 40 minutes or until golden brown and solid across the top.
