Wicked Brownie Bites

I recently baked some goodies as treats for a baby shower for a sweet friend of mine. The theme was mini desserts, and so I broke out my favorite dessert cookbook: It hasn’t failed me yet!

These brownie bites were just calling my name. Definitely needed some chocolate in the mix of treats and these were perfect little bites (dangerous, too, since it was easy to eat a handful!).

Wicked Brownie Bites

Makes 24
Recipe courtesy Bite-Size Desserts cookbook

1 cup coarsely chopped walnuts
3 ounces bittersweet chocolate chips or baking chocolate, finely chopped
3 ounces unsweetened baking chocolate, finely chopped
1/2 cup unsalted butter, cut into small pieces
2 eggs, room temperature
2/3 cup sugar
2/3 cup light brown sugar
1 teaspoon vanilla extract
1/2 cup flour
2 tablespoons cocoa powder
1/4 teaspoon kosher salt

Preheat oven to 350 with rack in middle. Grease mini muffin pans.

Place walnuts in pie plate and toast in oven 8 minutes. Remove and cool.

Place chocolate and butter in top of double boiler over low heat or in microwave-swafe container (melt on low for 30-second bursts, stirring after each). Stir often with rubber spatula . Remove top pan and wipe bottom and sides dry. Let cool and stir occasionally.

Whip eggs in mixer bowl with wire whip attachment until frothy. Add sugars and whip until mixture is very thick and pale, about 5 minutes. Mix in vanilla, and add chocolate/butter mixture. Blend on low. Scrape down sides and bottom of bowl with spatula.

Sift flour, cocoa, and salt. In three stages, add to chocolate mixture, blending well after each. Scrape sides and bottom with spatula. Add walnuts and stir to distribute evenly.

Divide batter evenly among muffin cups.

Bake 25 minutes or until an inserted toothpick comes out slightly moist. Remove from oven and transfer pans to racks to cool. Once cooled, gently pop brownies out and cool. Serve at room temperature.
