Quinoa Salad With Avocado and Cumin-Lime Vinaigrette

I love a good quinoa salad recipe and this one is divine. The dressing is so delicious! I want to try it out on regular salad next. It comes from Kayln’s Kitchen food blog, one of my favorites for healthy recipes. Avocado and quinoa is one of my favorite combos and adding extra veggies just makes it better! This is definitely one I’ll make again, as it gives a great excuse to use up a load of our CSA produce.

We got a HUGE avocado in our latest delivery. This guy was a monster! I should have stuck something else in here for size comparison as the photo just does not show the sheer enormity of the avocado. And it was delicious, too. I only used half of it for this recipe (the other half became a giant bowl of guacamole that we consumed quite quickly).

We also got these funky radishes, which went straight into this salad! Fun, quirky, and tasty.

Quinoa Salad With Avocado and Cumin-Lime Vinaigrette

1 cup quinoa
2 cups water
2 avocados, peeled and diced in 3/4-inch pieces
1 tablespoon lime juice
1 cup chopped radishes
1 cucumber, peeled, seeded, and diced in 1/2-inch pieces
1/4 cup thinly sliced green onions

Dressing:
3 tablespoons lime juice
1/2 teaspoon cumin
1/2 teaspoon seasoning
1/2 teaspoon sea salt
2 tablespoons olive oil

Boil 2 cups water (I used chicken stock) in small saucepan, stir in quinoa, reduce heat to a simmer and cook until all the water is absorbed, about 15 minutes.

After quinoa cools a bit, place in bowl, fluff with a fork and cool until at room temperature, about 15 to 30 minutes.

In small bowl, toss avocado with 1 tablespoon lime juice.

In another small bowl, stir together 3 tablespoons lime juice, cumin, seasoning and salt, then whisk in oil.

Stir radishes, cucumbers and green onions into quinoa bowl. Add in dressing (may not need all of it). Gently stir in avocado, season to taste with salt and pepper, and serve.
