Peach and Tomato Salad

I’ve been wanting to try out this recipe ever since I saw it in Cooking Light earlier this summer. And it’s a keeper! We’re always overflowing in tomatoes and peaches in this season, and this dish is a fantastic use of both. I never thought to combine them before! Yum. It’s easy, no cooking involved, and healthy and delicious. Really, what more can you ask for? Definitely going to be a summertime staple in my kitchen. (Especially since I have newfound love for heirloom tomatoes; I still can’t believe I spent most of my life not liking them.)

Peach and Tomato Salad

Makes 8 servings
Recipe courtesy Cooking Light

1/3 cup vertically sliced red onions
3 ripe peaches, pitted and each cut into 8 wedges
1/2 pound heirloom tomatoes, cut into thick wedges
1/2 pound cherry tomatoes, halved
2 tablespoons sherry vinegar
1 tablespoon olive oil
2 teaspoons honey
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup feta cheese
1/4 cup basil, torn

Combine first 4 ingredients in large bowl.

Combine vinegar, oil, honey, salt, and pepper in small bowl, whisking. Drizzle over peach mixture; toss well to coat. Sprinkle with cheese and basil.
