Baked Pesto Chicken

This was such an easy dinner to make. We just made our own pesto really quickly (basil pulled from the garden, walnuts, olive oil, and Parmesan — yum!) and used that instead of jarred. It turned out really well! And super easy. Two thumbs up! We had this with kale chips and a mixed greens salad. So, yes, everything we ate was GREEN! 🙂

Baked Pesto Chicken

Serves: 4
Recipe courtesy South Beach Diet

4 boneless skinless chicken breast halves
1/2 cup pesto (jarred)
2 ounces shredded part-skim mozzarella cheese (1/2 cup)

Heat oven to 375.

Season chicken with salt and pepper. Spread 1/4 cup of pesto in 9×13-inch baking dish. Lay chicken breasts over pesto in even layer and spread with remaining pesto.

Cover dish with foil and bake until cooked through, 20 to 25 minutes. Uncover and top with cheese. Bake until cheese melts, 5 minutes. Serve hot.
