Orange-Marinated Grilled Salmon With Green Mustard Sauce

This is another great find from the cooking class we recently took. This recipe is so easy to make, and pretty healthy to boot. Especially since you hide all those good-for-you greens in the sauce! It’s quite sneaky. And delicious. Two for one!

Orange-Marinated Grilled Salmon With Green Mustard Sauce

Serves: 4

Salmon:
4 salmon fillets
1/3 cup dry white wine (sauvignon blanc)
1/3 cup orange juice
1/3 cup soy sauce
1/3 cup vegetable oil
Sauce:
2 cloves garlic, peeled
2/3 cup coarsely chopped spinach
2/3 cup coarsely chopped arugula
1/4 cup sour cream
1/3 cup half and half (not milk or heavy whipping cream)
2 tablespoons Dijon style mustard

1. Place salmon in flat casserole dish. Combine wine, juice, soy, and pour over salmon, turning to coat well. Cover and refrigerate 20 minutes, turning salmon over a couple times. Don’t wait longer than 2 hours or wine will start to cook salmon. Half hour is okay if necessary. Then rest on paper towels and pat dry. Brush oil on indoor grill and on fish (or toss w/oil).

2. For sauce, drop garlic cloves into running food processor and run until finely chopped. Stop and add remaining ingredients; process 30 seconds or longer until finely chopped and blended. Add salt if necessary.

3. Prepare grill. Cook salmon on medium heat 5 to 7 minutes per side depending on thickness, until just cooked through. Serve topped with sauce.
