Swiss Chard and Sausage Frittata
This recipe was a great find! We’ve been eating up lots of chard lately (yum!) since it comes quite frequently in our CSA delivery. While we do have a few good stand-by recipes that never fail, I’m still always on the lookout for new ways to shake things up a bit in the kitchen.
A friend of mine gave me this recipe and it came out so well. We had it for dinner but the leftovers made a delicious breakfast. Honestly, you could combine just about anything with either bacon or Italian sausage and how could it NOT be good? It makes everything fun!
Chard is a-wilting! With sausage. Yummm.
Frittata is DONE! Love the pretty colors.
Out of the oven and onto my plate. The way life should be.
Swiss Chard and Sausage Frittata
2 tablespoons olive oil
2 Italian turkey sausage (8 ounces), casings removed
1/2 cup sliced red bell peppers
1/2 cup sliced onions
1 bunch Swiss chard (or spinach)
8 eggs
1/2 cup shredded cheddar cheese
1/4 teaspoon kosher salt
Preheat broiler rack 4 inches below heat.
Heat oil in large ovenproof pan over high heat. Cook sausage to brown, 3 minutes. Add pepper and onion and saute until soft, 3 minutes. Add chard and turn heat to medium, saute until wilted.
Whisk eggs to foamy. Add salt and cheese. Pour into pan and cook until bottom sets, 3 minutes. Broil until firm and browned, 3 minutes.
Looks yummy! Anything with sausage is good 😉
