I was searching for some good picnic food to bring to a summer park concert last weekend and found inspiration with a watermelon. I didn’t use a traditional recipe for this, but just made it up based on what I happened to have in the kitchen/patio garden. It worked out pretty well! So tasty and delicious. I actually made it again the next day for a gathering. This is my new favorite summery snack!
1/2 good-sized watermelon, cubed
1 cucumber, peeled, seeded, and diced
1/2 red onion, diced
1/2 cup basil, chopped
3/4 cup crumbled feta cheese
1 avocado, peeled, pitted, and diced
Mix together in bowl and serve.
