Parmesan Potatoes

This is one of my husband’s favorite recipes (not surprising, as it’s his mom’s!). It’s so easy to make (and with very little mess/cleanup, which is always a plus!) and it’s so delicious. I’ve made this with red potatoes, russet potatoes, you name it. So far, it works with pretty much whatever kind you have on hand. And they go well with just about everything! I even mixed up the leftovers with some scrambled eggs for breakfast. You just can’t go wrong!

Parmesan Potatoes

5 to 6 potatoes, peeled and cut into small cubes (3/4 to 1″ square)
1 cup flour
1/3 cup Parmesan cheese
1/4 cup butter

Combine flour, cheese, salt and pepper in zip-top bag. Shake potatoes in flour mixture to coat.

Melt butter in pan at 350, add potatoes to pan. Bake for 1 hour minimum, turning once.

Sprinkle with paprika and broil 2 to 3 minutes to crisp.
