Feta Bruschetta

This has been one of our favorite party foods for a while. This is a great twist on regular bruschetta and the flavors work wonders together. There’s never any left over at the end either! Delicious! You can serve with topping already on the toasts, or on the side (as we did at our Wine and Cheese Party to prevent any sogginess).

Feta Bruschetta

Makes 10 servings

1/4 cup butter, melted
1/4 cup olive oil
10 slices French bread (1 inch thick)
1 4-ounce package crumbled feta cheese
2 to 3 cloves garlic, minced
1 tablespoon minced fresh basil
1 large tomato, seeded and chopped

1. In a small bowl, combine butter and oil; brush onto both sides of bread. Place on baking sheet. Bake at 350 for 8 to 10 minutes or until lightly browned on top.

2. Combine feta, garlic, and basil; sprinkle over toast. Top with tomato. Bake 8 to 10 minutes longer or until heated through. Serve warm.
