Grilled Stuffed Pork Chops

It’s Thanksgiving in April! Or so it felt when we made these stuffed pork chops. I forget sometimes how much I love stuffing. I could eat anything if it was covered in yummy stuffing. Mmmm. Luckily, I stocked up at Costco before holiday season ended last year so I have a bountiful supply to use in recipes just like this one! The pork chops came out moist and delicious and the stuffing was perfect! Fun dinner for springtime!

Grilled Stuffed Pork Chops

Serves: 4

1 teaspoon dried marjoram leaves
1 teaspoon freeze-dried chopped chives
1 teaspoon dried basil leaves
2 cups herb- seasoned stuffing mix (I used my favorite, Pepperidge Farm)
1/3 cup finely chopped onions
1/2 cup hot water
1/4 cup margarine or butter, melted

Pork Chops:
4 boneless pork loin chops, (1 inch thick)

1. Heat grill. In medium bowl, combine marjoram, chives and basil; mix well. Reserve 2 teaspoons herb mixture; set aside. To remaining herb mixture, add stuffing mix, onion, water and margarine; mix well.

2. Cut deep horizontal pocket in one side of each pork chop. Stuff each chop with about 1/2 cup stuffing mixture; press firmly. Sprinkle reserved herb mixture on both sides of each chop.

3. When ready to grill, place chops on gas grill over medium-high heat. Cook 15 to 20 minutes or until pork is no longer pink in center, turning once. Serve warm.
