Oatmeal Carmelitas

This is one of our favorite cookie bar recipes to make! It came from my mother-in-law and so, of course, it’s fantastic. This are so easy to make the flavor is so perfectly sweet and yet they still have a great crunch to them. I don’t actually always like caramel but I love these! They never last long around here.

Oatmeal Carmelitas

Makes 36 bars.

2 cups flour
2 cups quick-cooking rolled oats
1 1/2 cups firmly packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups margarine or butter, softened

1 6-ounce package (1 cup) semisweet chocolate chips
1 12-ounce jar (1 cup) caramel ice-cream topping
3 tablespoons flour

In large bowl, combine all crust ingredients at low speed until crumbly. Press half of crumb mixture, about 3 cups, in greased 13×9-inch pan. Reserve remaining crumb mixture for topping. Bake at 350 for 10 minutes.

Sprinkle warm base with chocolate chips. Combine caramel topping and 3 T. flour; pour evenly over chocolate chips. Sprinkle with reserved crumbs. Return to oven and bake for 18 to 22 minutes or until golden brown. Cool completely. Cut into bars (refrigerate for easier cutting).
