Banana Bread Cookies

These taste just like banana bread but in a yummy cookie format. Banana bread is practically a staple in our house so these went fast! So fast I didn’t even take photos! But I promise that they’re pretty and oh-so-tasty.

Banana Bread Cookies

Makes: 3 dozen

Recipe courtesy Buns in My Oven

1/2 cup sugar
1/2 cup brown sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1/2 teaspoon cloves
1 teaspoon cinnamon
3 ripe banana, mashed
2 cups rolled oats
1 cup semisweet chocolate chips

In the bowl of your mixer cream together the butter and sugars until creamy. Beat in the eggs and vanilla. In a separate bowl stir together the flour, baking soda, cloves, and cinnamon. Add to the creamed mixture and mix well. Mix in the mashed bananas, oats, and chocolate chips until well incorporated. Drop by rounded spoonful (I used my cookie scoop) onto a greased or parchment lined cookie sheet and bake in a pre-heated 375 degree oven for 10 to 12 minutes. Cool on a wire rack.
