Grandmother’s Buttermilk Cornbread

I was trying out a new cornbread recipe for a potluck and it totally bombed. Had NO flavor and just didn’t taste right. I’d followed the recipe exactly so I called it a dud and set out to frantically began Googling for a new recipe for my do-over. This one hit it on the money! Nicely light and sweet and so addictive. It was a hit with the group and I’m definitely keeping this one on my list! I love when AllRecipes comes in and saves the day!

cornbread1Grandmother’s Buttermilk Cornbread

Serves: 18

1/2 cup butter
2/3 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup flour
1/2 teaspoon salt

1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

  1. As much as I enjoy reading about all your cornbread adventures, I don’t think I’ll ever cross over from Marie Calendar’s mix. It’s just too delicious and easy. I can’t imagine any homemade will beat it (or be worth the trouble) but when you do finally find THE ONE, I promise I’ll try it 🙂
