Chocolate White Chocolate Chunk Cookies

These have been some of my favorite cookies to make for several years. They are highly addictive and full of chocolatey goodness! I made these for some friends this weekend at my husband’s request (he wanted his own stash!). We snuck into their house while they were on their honeymoon to decorate and leave a special surprise along with the cookies….

*Cue evil laughter!*

But in all seriousness (a rarity, I know), these are delightful cookies. Easy to make, satisfyingly crunchy but still nice and a little bit soft in the middle; quite the perfect combo for my tastes. And the chocolate cookie with white chocolate chunks is so delicious! Easy to please with these guys!

Chocolate White Chocolate Chunk Cookies

Makes 48 cookies

1/2 pound unsalted butter, room temperature
1 cup light brown sugar
1 cup sugar
2 teaspoons vanilla extract
2 eggs, room temperature
2/3 cup cocoa powder
2 cups flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 pounds white chocolate, coarsely chopped

Preheat oven to 350.

Cream butter and sugars until light and fluffy in bowl of mixer with paddle attachment. Add vanilla, then eggs one at a time, and mix well. Add cocoa and mix again. Sift flour, soda, and salt and add to chocolate with mixer on low speed until just combined. Fold in white chocolate.

Drop dough onto baking sheet lined with parchment paper, using 1 3/4-inch scoop. Damper hands and flatten dough slightly. Bake 15 minutes (cookies will seem underdone). Remove and let cool slightly on pan, then transfer to wire racks to cool completely.
